Maple Walnut Cupcakes with Maple Spiced Frosting

  1. Preheat oven to 350 degrees F. Line standard muffin pan with paper liners. In a medium bowl, sift together flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  2. In a large bowl, beat sugar and maple syrup with butter until creamy. Add egg and egg whites, one at a time and mix. Add applesauce and vanilla and mix until combined. Add flour mixture alternating with milk, starting and ending with the flour mixture. Stir in walnuts.
  3. Scoop batter into muffin cups until ¾ full, bake until top bounces back when touched, about 18-20 minutes. Cool on wire rack. Frost with Spiced Maple Frosting and top with Honey-Candied Walnuts.


  1. Mix all ingredients until combined.
  2. Add more icing sugar as needed until thick and creamy.


  1. Place walnuts on a pan that has been lined with parchment paper and drizzle with honey. Bake in an oven at 350 degrees F, until honey is bubbling and golden brown, about 10-15 minutes.
  2. Let candied walnuts cool on parchment paper on a flat surface.


  • Unbleached All-Purpose Flour - 2 ¾ cups
  • Butter - 1 cup
  • Salt - ¼ tsp
  • Baking powder - 1 tbsp
  • Sugar - 1 cup white sugar plus ½ cup pure maple syrup
  • Eggs - 1 large egg plus 2 egg whites, slightly beaten
  • Applesauce - ¼ cup
  • Cinnamon - 1 ½ tsp
  • Nutmeg - ¼ tsp
  • Vanilla Extract - 1 tsp
  • Milk - 1 cup
  • Walnut Pieces or Crumbs - 1 ½ cup


  • 4 cups icing sugar
  • ½ cup pure maple syrup
  • ¼ cup milk
  • ¼ cup butter, softened
  • ½ tsp cinnamon
  • ¼ tsp nutmeg


  • 1 cup walnut pieces or crumbs ¼ cup honey
