Cranberry and Coconut Loaf


This recipe is so easy to make that you could mix it up quickly before a last minute guest pops in for a visit and serve it nice and warm with a hot cup of tea. As an added bonus, your house will smell amazing too.

  1. Mix all ingredients thoroughly with a wooden spoon.

  2. Pour into a loaf pan lined with parchment paper.

  3. Bake at 350F for approximately 1 hour or until browned on top and a skewer comes out clean.


  • 1 cup Self-Raising Flour

  • 1 cup White Sugar

  • 1 cup Coconut

  • 1 cup Dried Cranberries, chopped

  • ½ cup Milk

  • ½ cup Canola Oil

  • 2 tsp Vanilla Extract

  • 2 tsp Ground Cinnamon

  • 2 Eggs
